Best Vegan Chocolate Cake

This recipe is courtesy of Sergio, the chef at Xinalani Retreat center. We are there every year at least once leading a retreat and every single one of our guests is always “wowed” by this. And it’s super easy too! Try it at home and taste for yourself. Or even better, come on retreat with us March 31-April 6, 2013 and sample Sergio’s skills while with us on retreat at Xinalani.

Chocolate Cake
2 ½ cups Ap flour
1 1/4cup coco powder
1 1/2cups sugar
2 1/2tsp baking powder
1 ¼ tsp baking soda
1 ¼ salt
12 oz firm tofu
1 ¼ cup soy milk
½ cup canola oil
½ Tbs vanilla
1 ¼ cup water
2 ea banana serve 12

Pre heat the oven to 350°
In a mixing bowl mix all the dry ingredients and set a side
Put all the rest of the ingredients together and mix well. Add the dry mixture and incorporate.
Spray your cake mold with pam to save it from sticking,put it in the oven and cook for about 20 minutes.
